Lombardino's Porchetta (Small)

Fisher Family Farm pork loin that we stuff in-house with fresh rosemary, Italian parsley, toasted fennel seed, garlic & Aleppo chili. Each roast around 3 lbs. A delicious dinner awaits!  

Cooking Instructions:

Pull roast from refrigerator one hour before cooking. 

Preheat oven to 425 degrees. Roast the porchetta for 15 minutes to get the outside of the roast some color.  Bring oven temperature down to 375 degrees.  Continue roasting to reach an internal temperature of 130 degrees which is a perfect medium and 145 degrees is medium well to well done.
